The Shun Deba Classic Pro VG003 Japanese Style 8-1/4" Damascus Blade Chef's Knife is a classic Japanese culinary knife. Used most often to process fish and poultry, it combines some of the functions of a cleaver with some of the functions of a chef's knife. The deba is used to behead and fillet fish, cut through small bones and skin, bone poultry, and cut meat. The Shun Classic Pro 8-1/4 inch Deba has a wide blade with a dropped point and a curved belly; it is sharpened on a single side of the blade. This traditional single-bevel design combines with a slightly hollow-ground back to help keep delicate foods intact and enable them to release quickly from the blade. Our full-sized deba is nimble and precise and ideal for most of the same tasks as a chef's knife.
